(Based on recipe by Christiana McCormick on AllRecipes.com)

in the tin: flour plain, white sugar, baking powder, ground cinnamon, bicarbonate of soda

you add: 1 cup milk, 1/4 cup butter melted, 2 large eggs, 1 tablespoon vegetable oil or as needed (alternatively use non-dairy substitutes)

Time to make: 20 mins (10 mins prep / 10 mins cook)

  1. Tip contents of tin into a bowl and mix together.

  2. Whisk milk, melted butter, and eggs together in a separate bowl.

  3. Pour milk mixture into flour mixture; whisk until well blended.

  4. Heat oil in a pan over medium heat.

  5. Drop batter in 1/4-cup scoops into the hot pan. Cook until bubbles form and the edges are dry, 3 to 4 minutes.

  6. Flip and cook until browned on the other side.

  7. Remove to a plate and keep warm while you cook the remaining pancakes, adding more oil to pan as required.
